Roadside restaurant

Roadside carinderia pose for a photographer. The restaurant fixtures include a glass-covered cabinet that displays the dishes to advantage, a counter fixed to two bamboo posts and a bamboo bench. Local health and sanitation officers during the American regime closely monitored the practices of these restaurants which provided for no protection against dust and disease-carrying flies. 1900s.
